Butterfinger Bites

Last night I ran across this recipe for homemade Butterfingers.  I ended up with a decent stash of candy corn after Halloween so I thought I would put it to good use and try out this recipe.

I have to say the taste is spot on, delicious!  The texture isn’t the same flakiness of the original candy bar, but some of the candy corn crystalizes during cooling, making a similar texture that you get when you eat a butterfinger candy bar.

Put 16 oz of candy corn into a microwavable bowl.  Melt for 1 minute in microwave.  Stir and continue cooking in 15-second intervals until melted, stirring after each interval. Stir in 16 oz of peanut butter. Spread mixture in an 8×8 pan lined with parchment. Cool completely.

Cut into squares.

Dip in melted chocolate candy coating.

Lay on waxed paper to set.

If you’ve been eating way too much sugar lately, as I feel I have, chase down the Butterfinger Bites with a nice plate of pasta and brussel sprouts (that have Christmas ham in them, haha)
